Ingredients and Substitutions

  • Jalapeños – Fresh jalapeños add a lot of heat to this delicious dip, topping or side dish. Slice in half to scoop out the membrane and seeds before dicing.
  • Poblanos – Another delicious pepper to add a little heat to this salsa.
  • Cilantro – I’m team cilantro, I love the flavor it adds but omit if you’re on the other team.
  • Red Onion – Adds color and flavor. You can substitute white onion in a pinch.
  • Corn – Fresh corn cut removed from the cob provides the best flavor, but you can substitute canned corn if needed. Chipotle uses white corn, but use whatever is fresh and available, Both offer great flavor.
  • Lime Juice – Fresh squeezed lime brings out the bright flavors. You can substitute 100% Real Lime Juice in a pinch.
  • Lemon Juice – Again, fresh is best. If you don’t have any fresh lemons on hand you can substitute 100% Real Lemon Juice.

Variations

  • Roasted – Use roasted corn and or poblano peppers to mix it up
  • Black Beans – Throw in some black beans for a little protein.
  • Avocado – Another great way to add in a little protein.

Tips for Juicing Citrus

  • The easiest way to squeeze a lime is to start at room temperature, and roll it around to soften it.
  • Slice it in half lengthwise. Juice by hand squeezing it until all the juice is released, use a hand-held juicer or the citrus attachment on your mixer.
  • On average, 1 lime makes about 2 tablespoons juice, 1 lemon about 3 tablespoons of juice.
