Ingredients and Substitutions
- Baby Potatoes – Use red potatoes, gold potatoes, or any other favorites. Skin on.
- Olive Oil – Use any of your favorite oils (avocado oil, vegetable oil or canola oil will work) or simply use melted butter.
- Sea Salt – Fresh cracks of sea salt is delicious on these potatoes. Any thick flake salt will do.
For the Parmesan Topping
- Parmesan – Finely Grated.
- Garlic Powder – Not garlic salt, which has a much higher salt content. If you do use garlic salt, eliminate the added salt in this recipe.
- Salt
- Black Pepper
Variations
- Add a teaspoon of your favorite seasoning blend – like this homemade ranch seasoning, for example.
- Optional Garnish – Add vibrant green touches of fresh green onion, chives, parsley, dill, basil or rosemary.
- Spice them up with up to 1/2 teaspoon of chili powder or cayenne pepper.
How to Make these Parmesan Roasted Potatoes
- Preheat Oven to 400 degrees F. Coat baking dish with olive oil.
- In a small bowl, combine the parmesan topping ingredients.
- Using a spoon, sprinkle parmesan topping mixture across the bottom of the baking dish.
- Slice potatoes in half, placing them face down into the parmesan topping on the baking dish. Brush potatoes with more oil and salt.
- Bake as directed, until parmesan is brown and potatoes are perfectly soft and crispy.
- Remove from oven and allow them to rest as directed. Cut and separate potatoes as necessary before serving.
- Transfer to a platter, sprinkled with fresh garnish to serve.

Score the potatoes by slicing them crossways several times, without slicing all the way through. Scoring can help them bake more evenly, as well as allowing the flavors to soak into the center of each bite.

Ingredients
- 1.5 Pounds Baby Potatoes red potatoes, gold potatoes, or your favorites
- 3 Tablespoons extra virgin olive oil or avocado oil, vegetable oil or canola oil or simply use melted butter.
- ½ Teaspoon Sea Salt Any thick flake salt
Parmesan Topping
- ½ Cup Parmesan Finely Grated
- ½ Teaspoon Garlic Powder
- ¼ Teaspoon Salt

Instructions

- Bake for 30 minutes, until parmesan is brown and potatoes are perfectly soft and crispy.
- Remove from oven and allow them to rest for five minutes. Cut and separate potatoes with a metal spatula.
- Transfer to a platter, sprinkled with fresh garnish to serve.

- A clear glass 9×13 baking dish is preferred for this recipe. You want the potatoes to crowd into the baking dish to soak up all the parmesan topping!
- If you’d like, you may score these potatoes before placing in the pan, to help them soak up even more seasoning and flavor as they bake.

Is it “safe” to use a glass baking dish above 360 degree oven? I always heard the glass could shatter. Thanks.

There are several oven safe glass brands, Pyrex being the most popular. This type of glass can be heated at much higher temperatures- far beyond 400 degrees, actually! I’ve never had a problem and have always used them safely in our oven.

Do you use the Parmesan in a can that we sprinkle on spaghetti or use a block of Parmesan grated fresh?
You can use either – I always prefer fresh grated, but either will work for this recipe.
