When we created our Biscoff cinnamon rolls, we knew we needed to pair it with a frosting that matched. How could we not crave even more of that incredible Biscoff cookie butter joy?

Thick and decadent but also easy enough to pour over anything, you can make this icing thin enough to glaze, or thick enough to spread.

  • Butter – Unsalted butter is best here, softened. 
  • Cookie Butter – Melted cookie butter is necessary for this frosting.

  • Heavy Whipping Cream – You can also sub with half and half or even milk.

How to Store

  • Room Temperature – This frosting can be left out at room temperature safely for up to two days.
  • Refrigerator – This cookie butter frosting will keep covered in the fridge for up to 3-4 days in the fridge. It’s great to make ahead, too, and can be easily stored before you’re ready to serve.
  • Freezer – Freeze this speculoos icing for up to three months in an airtight storage container. To use after freezing, let it defrost in the refrigerator overnight. You can bring it back to room temperature and make it creamy by re-whipping it with your whip attachment on your stand mixer.

Ingredients  

  • ½ cup Unsalted Butter (227 grams) softened
  • ½ cup Cookie Butter (Biscoff) (254 grams) melted
  • 1 cup Powdered Sugar (50 grams)
  • ¼ cup Heavy Whipping Cream (60 grams) Sub with half and half or milk if necessary

Instructions 

  • First, warm cookie butter in 10 second increments to melt it down a little. 10-20 seconds should be sufficient.
  • In the fitted bowl of your mixer (with a whisk attachment) add room temperature butter, melted cookie butter and powdered sugar.
  • Add heavy cream, a little at a time until you reach the consistency you're after.
  • Drizzle over cinnamon rolls or any favorite dessert. Serve and enjoy.

      Cookie butter is a spread (similar to Nutella or peanut butter) that is made from pulverized speculoos cookies. We buy it at Trader Joe’s, but other grocery stores carry it sometimes now too.
