Caramelized Shallot Mashed Potatoes

I first made and shared these Caramelized Shallot Mashed Potatoes years ago (with yellow onions) and let me tell you, it wasn’t pretty, but oh they’re so good!
So if you’re looking to mix up your mashed potatoes, this is just the recipe for you!
Shallots are type of onion that are rich and sweet – they are not as strong as a yellow, red or white onion and have less crunch, which makes them perfect for caramelizing. I use shallots in a lot of my recipes because they add so much flavor!
It’s a flavorful alternative to caramelized onions!
It takes just a few minutes to caramelize shallots in butter and really elevates mashed potatoes. Whether this is the only dish you make for Thanksgiving or you need a simple dish that really stands out, you’ll love these Caramelized Shallot Mashed Potatoes!

How to Make the Best Mashed Potatoes
Believe it or not, I boil potatoes in their skins. It’s not only a time saver, but it protects the potatoes from absorbing too much water. Boiling potatoes in their skin makes them so creamy!
Allow them to cool a few minutes and they’ll fall right out of their skins! Easy peasy! These mashed potatoes are one of the best Side Dishes for Steak.
How to Make Caramelized Shallot Mashed Potatoes
Caramelize shallots over medium heat until golden brown. You can read more about the process and watch my easy video for how to caramelize onions here.
Add garlic and reduce to low heat to avoid the garlic browning. When garlic browns, it becomes bitter in flavor.
Salt and pepper to taste.

Caramelized Shallot Mashed Potatoes
Ingredients
- 2 pounds yukon gold potatoes
- 3 tablespoons butter salted or unsalted, just add extra salt to taste!
- 6 large shallots (about 1 cup caramelized)
- 2 tablespoons minced garlic
- ¼ cup milk Whole or 2%
- salt and pepper to taste
Instructions
- Place potatoes in large saucepan. Add cool water to cover potatoes by 1⅓ inches. Bring to a boil over medium high heat. Reduce heat and simmer until tender, about 15-20 minutes.
- Meanwhile, over medium heat, melt butter and add shallots. Cook until golden brown.
- Reduce heat to low, add garlic stirring for 1 minute.
- Remove skins from slightly cooled potatoes and add to a mixing bowl.
- Add milk and mix until smooth. Blend in caramelized shallot.
- Salt and pepper to taste.
