Ingredients and Substitutions
For the Marinade
- Olive oil – We love extra virgin olive oil but you can use your favorite type of oil here.
- Balsamic Vinegar – The vinegar not also adds to the flavor of the steak, but the acid in it helps to break down the fibers of the meat to make it wonderfully tender.
- Seasonings – Garlic, mustard and black pepper
For the Sandwiches
- Steak – Sirloin or strip are the best cuts for these steak sandwiches. They are flavorful cuts that become deliciously tender when marinated.
- Dinner Rolls – Have you ever made the take and bake breads in the bakery section of your market? I’m addicted. I use them for sides, sandwiches, sliders and more. However, you can always use standard egg dinner rolls. I don’t discriminate against bread.
- Onion – Caramelized onions add a bite of sweetness to these sliders and they are so easy to make.
- Blue Cheese – Steak and blue cheese are such a great flavor pairing and the saltiness from the cheese cuts through the sweetness of the onions.
- Sun-dried Tomatoes – Finish off these sliders with a little pop of color, as their tangy flavor works so well next to the creamy blue cheese.
How to Make
- Pour all marinade ingredients into a sealable bag and add steak. Allow to marinate.
- Before grilling, remove the steaks from the refrigerator and let sit. Meanwhile, bake your bread as directed, and caramelize onion.
- Heat your grill and cook steak as directed.
- Transfer steaks to a baking dish or platter, tent loosely with foil and let rest five minutes. Slice thin.
- Add steak, creamy blue cheese, caramelized onions and sun-dried tomatoes to each roll!

- Let the marinated steak come to room temperature before you cook it and let it rest before slicing it, so that it is as tender as possible.
- If you can, buy your steak from your local butcher. It is often so much more flavorful and of a much better quality than grocery store meat. Plus you’re supporting local!
- If you have an instant read thermometer, for rare steak it should read 135ºF and for medium rare 140ºF. If you want the steak medium it should be 145ºF.

In my opinion, nothing can compare to sirloin in this steak sandwich recipe. It’s tender and so flavorful because it’s beautifully marbled.
If you happen to have any leftover prime roast or slow cooked beef roast, that will work really well too. You can also use a cut like flank or skirt, but be sure to marinate those for at least six hours as they are much tougher cuts of beef.
The perfect steak sandwich is rich and loaded with flavor. The toppings are important and should compliment each other.

- Refrigerator – Store the steak and onions in an airtight container and keep them in the fridge for 2-3 days and reheat as desired.

Ingredients
Marinade
- ¼ cup extra virgin olive oil
- ¼ cup balsamic
- 2 tablespoon minced garlic
- 2 tablespoon whole-grain mustard
- black pepper to taste
For the sandwiches
- 16 ounces sirloin or strip steak
- 4 dinner rolls
- 1 cup onion sliced (one medium-large onion)
- 2 tablespoons extra virgin olive oil
- ¼ cup a wedge of creamy blue cheese
- 7 ounces sundried tomatoes one jar, drained
Instructions
- Pour all marinade ingredients into a sealable bag and add steak. Allow to marinate 2-12 hours.
- About 20 minutes before grilling, remove the steaks from the refrigerator and let sit. Meanwhile, bake your bread, if necessary and heat 2 Tbsp olive oil on medium-low. Add sliced onion and allow to caramelize. Reduce to low, if necessary.
- Heat your grill to high. Cook 4-5 minutes on first side and 3-4 on other side for medium-rare.
- Transfer steaks to a baking dish or platter, tent loosely with foil and let rest 5 minutes. Slice thin.
- Add steak, creamy blue cheese, caramelized onions and sundried tomatoes to each roll!

Hello! I make dinner for my father in law one night a week… he is now in heart failure so we need to cook very low sodium- I saw this and thought it would be low sodium. I would make it minus the blue cheese and sun dried tomatoes- just because I know he wonโt eat those. Would it be low sodium minus those two ingredients. I am guessing the marinade doesnโt have sodium? Thank you!
